khandvi (Patodi)

 

Khandvi a famous Gujrati snack which is extremely tasty when it is readily available but seems difficult to make as stirring continuously for 15-20 minutes avoiding sticking at the bottom and prevent crumbling and everything. But what if i say you can skip all this by preparing it in pressure cooker. Cant believe heres the recipie tried and tested


Ingredients :

1 Cup Gram Flour (Besan)
1 Cup Curd (Dahi)
1 Cup Water (Pani)
1 Pinch Turmeric (Haldi)
Ginger - Green Chilli Paste
Salt to Taste

Garnish :
1 tbsp Oil
Mustard seeds
Curry leaves
Chopped Corriander
Greated Coconut


Method :

1. In a vessel add gram flour, curd (curd should be tight not too thin or watery ). Mix it well keeping no lumps. Add turmeric, salt and water of ginger - green chilli paste (add 1 cup of water to paste and then strain the water and use that water. Using paste will be difficult to spread Khandvi so we use water instead. Dont throw away your paste you can use it in other food ). Mix Everything well.

2. Transfer this mixture into a steel container which has a proper fixing  lid and which can be easily put in your pressure cooker (can be easily removed after cooking since it would be hot then). Close the lid tightly. I have shared pics of 2 containers which can be used

3. Take your pressure cooker pour in some water. Keep the container inside. Close the cooker and keep on high flame for 1 whistle and then on low flame for 10 minutes (after the whistle). Ensure the container has a proper closing lid other wise the water kept in cooker for boiling will enter your batter

4. Meanwhile, keep the surface or plates ready on which you will spread the batter (no need to grease) When the pressure releases (normally after 5 minutes) quickly open the cooker and take out the container.

5. On opening the lid you will see the batter is thick on top and watery below but dont worry thats normal . Mix it well with a big spoon till everything in even.

6. Without wasting much time pour batter on platform or plates and spread evenly not much thick. You can spread with help of flat bowl or however you spread your dosa . Do this very fast dont allow the batter to cool before spreading.

7. Let it dry for atleast 15 minutes then cut strips (size as per your choice) and roll them. 

7. Place the rolls in a plate close next to each other. Heat some oil in a pan. Put Rai, Curry leaves. Let it cool down. Pour this oil on your Khandvi rolls. Garnish with coriander and coconut grates (optional). 

8. A light, cool and easy snack is ready to serve.
